I sure hope you had a wonderful Christmas celebration with those you love. Some are still waiting to get together in the days coming, but however you chose to spend your holiday time, I pray that you experienced happiness and lasting joy.
We have had a couple get togethers with family, and some with friends. We enjoyed the following salad on Christmas Day. It is sweet enough to be a dessert, and pretty enough for any holiday. Because of its deep red color, you might want to try it out for an upcoming Valentine meal. The part I like about it is its tart taste along with the sweet filling. Cranberries are near the top of my favorite list, even though the little sour red berries make my lips pucker! They are just so delicious in relish, juice, and sauce. Or I especially love the dried cranberries to snack on.
This recipe originally comes from Andrea Lory, daughter of Ben and Joyce Den Hartog. She loves to cook, and try new recipes. We sure enjoyed this one!
Andrea’s Cranberry Salad
Mix together:
2 cups crushed graham crackers
1/2 cup soft butter (not melted)
Pat this into a 11 by 7 inch pan.
Beat the following together until smooth:
8 oz. cream cheese
1 tsp. vanilla
1/2 cup powdered sugar
1 Tbsp. milk
Stir in 1 cup of Cool Whip. Spread over the graham cracker crust. Refrigerate.
Grind 12 oz. FRESH cranberries.
Add 1/2 cup water and 1 cup sugar. Cook until thick (takes a few minutes) and then cool.
Pour the cranberry mixture over the cream cheese mixture and chill until set. ( a few hours)
