It is time for the Hospice of Murray County rummage sale held at the Murray County Fairgrounds. This week, as people bring things to donate to the sale, many volunteers are put to work sorting donations and setting up for the sale which actually begins NEXT Monday, September 17th, through Friday noon on Sept. 21st. Many of the buildings on the fairgrounds will be bulging with furniture, clothing, antiques, tools, toys, etc, for the public to buy. All items MUST be sellable. That means they need to be clean and in good repair. This is the biggest fundraiser for Hospice of Murray County, and it takes a large number of willing workers to pull it off. Kudos to all who share their time and work hard to make it all happen! If you have items to donate, they can be brought to the fairgrounds by this Thursday evening, Sept. 12th, before 7 PM.
Each day there are volunteers who provide meals for the workers,which is a nice gesture in their busy time of getting things ready for the sale. I enjoyed helping with one of the meals, but was searching for a recipe for making a creamy cucumber salad. After looking through a few of my cookbooks, it dawned on me that my mom had made those several times while I was growing up. I took a few moments to search through her old recipe box that had been left behind with some of her things. I found a recipe card titled “Cukes and Cream”, written in her handwriting. It brought a smile to my face, and I could just taste the tangy salad before I even began to peel and slice the cucumbers. Thanks, Mom, for leaving this treasure for me to find!
Maybe you have some of those green veggies waiting to be used in your garden or refrigerator. If so, I recommend the following recipe tried and true from my mom’s kitchen to yours!
Cukes and Cream
Peel and slice 5-6 cucumbers and half of a large onion.
Combine together in a large bowl with a lid. Sprinkle 1/2 tsp. salt on top and fill with water. Let soak in fridge for about 2 hours.
Measure 1/2 cup sugar into a glass measuring cup. Add white vinegar to make 3/4 cup. Add Half and Half to make 2 cups. Add pepper to taste.
Drain the water off the cucumbers. Pour the cream mixture over the top and stir well. Enjoy! These will keep in the fridge for a few days.
