Beef Chow Mein
1 pound lean ground beef 1 (2 oz.) jar diced
pimientos, drained
1 1/2 cups sliced celery 2 tablespoons soy sauce
1 can (16 oz.) bean sprouts, drained 1/2 teaspoon ginger
1 (8 oz.) can mushroom pieces 2 tablespoons cornstarch
1 (8 oz.) can sliced water chestnuts, 3 tablespoons water
drained 4 cups chow mein noodles 1 (.14 oz) can beef broth or hot cooked rice
Brown ground beef until thoroughly cooked, stirring frequently. Drain. Add celery, bean sprouts, water chestnuts, mushrooms, broth pimientos, soy sauce and ginger; mix well. Reduce heat; cover and simmer 15 minutes stirring occasionally.
Meanwhile, blend cornstarch and water until smooth. Stir cornstarch mixture into beef mixture until bubbly and slightly thickened. Serve over chow mein noodles. Serve with additional soy sauce. 4 servings.
Banana Strawberry Muffins
2/3 cup sugar 1 2/3 cup flour
1/2 cup oil 1 teaspoon baking soda
2 eggs 1/2 teaspoon salt
2/3 cup mashed banana 3/4 cup finely chopped strawberries
1 teaspoon vanilla
Heat oven to 375 degree. In bowl; combine sugar, oil and eggs; blend well. Stir in bananas and vanilla. Add flour, baking soda and salt to sugar mixture stir until combined. Stir in strawberries. Spoon batter into muffin cups. Bake for 17 to 21 minutes. Serve warm or cool. Makes 12 muffins.
Sesame Onion Twists
2 tablespoons butter or margarine
1 1/2 cup finely chopped onions
1/4 teaspoon paprika
1 loaf (16 oz.) frozen bread dough thawed
1 egg, beaten
1 tablespoon sesame seeds
Grease large baking sheet; set aside. Melt butter in skillet until foamy. Add onions and paprika, cook until onions are tender stirring occasionally. Remove from heat. Spray work surface with nonstick cooking spray. Roll thawed bread dough into 14 x 12 inch rectangle. Spread onion mixture on one side of dough. Fold dough over onion mixture to make 14×6 inch rectangle. Pinch 14 inch side of dough to seal. Cut into 14 lengthwise strips. Gently twist dough strips twice each and place on baking sheet. Cover with a towel and let rise about 40 minutes or until doubled. Brush with egg; sprinkle with sesame seeds. Preheat oven to 375 degrees. Bake 15 to 18 minutes or until golden brown. Serve immediately. Makes 14 twists.
