I sure hope your Christmas holiday season has been a blessed one for you and your loved ones. We had a fairly quiet Christmas weekend, but did enjoy worshipping Christmas Eve at the Fulda Presbyterian Church with several other familiar faces in our community. It was a wonderful place to be to remember and worship the Christ Child. Thank you to so many who shared and took part in that meaningful service.
Christmas Day brought our youngest son, Peter, and his family to celebrate with us, along with Dan’s brother, Bruce, from the Brewster area. Since he is a bachelor, I think he probably got his “children” fix, watching and listening to all the shenanigans of our five grandkids who were here! We played some games after our meal, and also enjoyed a touching Christmas movie.
About a week before Christmas, my daughter-in-law, Krista, called and asked if I knew the menu for our celebration. When I asked why, she said that it would “rock their family’s world” if I would make meatballs for the main part of the menu. They all love them, and for Krista, it is a bonus with no gluten. She has to stay away from that in her daily meals.
Sweet-Sour meatballs are so easy, and with hamburger already in the freezer, it was easy for me to say yes to the request. This is probably the one meat dish most asked for by my family over the years for special occasions like birthdays, etc. They can be made ahead of time and freeze well. I tripled the recipe and still barely had any leftovers! Maybe your family will find them a favorite too!
Sweet-Sour Meatballs
Combine in a large bowl:
1 1/2 pound hamburger
1 cup milk
3/4 cup oatmeal
1 tsp. salt
1/4 tsp. pepper
3 tsp. grated onion
Mix lightly, and form into balls in a single layer in a 9 by 13 baking dish or pan. Pack them loosely, using an ice cream or cookie scoop.
Cover with this mixture and bake for one hour at 350 degrees:
3 Tlbs. sugar
3 tsp. vinegar
1/2 cup water
1 cup ketchup
Another new year is upon us. 2018 If you are like me, it will take you a few days to remember to write the correct numbers on a check blank or dated letter. What is ahead for us is a mystery. None of us knows how each day will play out. I think that probably is a good thing.
Good advice for the new year is found in scripture. John 14: 26-27 “ But the Counselor, the Holy Spirit, whom the Father will send in my name, will teach you all things and will remind you of everything I have said to you. Peace I leave with you; my peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.”
