Sugar Cookies
1 cup oil
1 cup butter
1 cup powdered sugar
1 cup white sugar
1/2 teaspoon salt
4 3/4 cup flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1 teaspoon vanilla
1/2 almond flavoring
Cream together oil, butter, powdered sugar, sugar and salt. Add flour, cream of tartar, baking soda, vanilla and almond flavoring; mix well. Roll in balls, walnut-size, flatten with a glass dipped in sugar. Bake at 350º for 10 minutes. Yield: about 6 dozen. Do not overbake.
Cinnabon Cinnamon rolls
2 eggs, (room temperature)
1/3 cup melted butter
1/2 cup sugar
4-1/2 cups all purpose flour
2-1/2 teaspoons yeast
1 cup warm water
1 teaspoon salt
Filling:
1 cup packed brown sugar
2 1/2 Tablespoons cinnamon
1/3 cup softened butter.
Mix dough and let rest 10 minutes. Roll out to a 16 x 21 inches rectangle about 1/4 inch thickness. Filling: Combine brown sugar and cinnamon until well mixed. Spread softened butter over the rolled out dough. Sprinkle cinnamon/sugar over dough. Roll up jelly roll style. Cut into 1 inch slices. Place on pan and let rise about 2 hours before baking. Bake 15 minutes or until lightly browned in 400º oven.
Icing:
4 tablespoons softened butter
3 ounces cream cheese
1-1/2 cups powdered sugar
1/2 teaspoon vanilla
1/8 teaspoon salt
Mix together and spread on warm rolls.
Cashew-Coleslaw Salad
1 bag coleslaw mix
1 head cauliflower, cut up
1/2 cup diced onion
6-8 strips bacon, fried and crumbled
2 cups mayonnaise
1/2 cup sugar
1/2 cup shredded Parmesan cheese
1 cup cashews
Combine coleslaw mix, cauliflower, onion and bacon. Mix and cover. Combine mayonnaise, sugar and Parmesan cheese in another bowl. Refrigerate at least one hour. To serve, mix mixtures together and add cashews.
