To Use Up Tiny Potatoes

Boil the small potatoes in salted water with the skins on and then run them through the potato ricer. The skins do not go through and the flavor is improved by the process.  The riced potatoes can then be frozen to be used as hashbrowns, mashed or added to casseroles such as egg bakes.

An Improved Washer

Addicts to basin washing will find it convenient to use a wire potato masher to force the fabrics up and down through the suds. It makes a little washing machine all complete, and eliminates the danger of rubbing or twisting delicate materials.

Peaches ‘n’ Cream Pie

3/4 cup all-purpose flour

1 package (3 ounces) cook and serve vanilla pudding mix

1/2 cup milk

1 egg

1 teaspoon baking powder

1/4 teaspoon salt

4 large fresh peaches, peeled and sliced

1 package (8 ounces) cream cheese, softened

1/2 cup sugar

Topping:

2 teaspoons sugar

1/8 to 1/4 teaspoon ground cinnamon

Combine the first six ingredients; beat for 2 minutes. Spread into a greased 9-in. pie plate. Arrange peaches over batter to within 1/2 inch of edge.

Beat cream cheese and sugar until smooth; spoon over peaches. Combine sugar and cinnamon; sprinkle over the top. Bake at 350º for 35 minutes until golden brown around the edge and a toothpick inserted in the edge of pie comes out clean. Cool. Refrigerate leftovers. Yield: 8 servings

Chili Over Spaghetti

2 pounds lean ground beef

1 cup chopped yellow onion

1 can organic fire roasted diced tomatoes, undrained

1 can tomato paste

1 package Old El Paso® chili seasoning mix

2 1/2 cups beef-flavored broth

2 tablespoons cider vinegar

1 teaspoon Worcestershire sauce

1/2 teaspoon cinnamon

1/2 teaspoon allspice

1/2 teaspoon salt

1/2 teaspoon pepper

1 box (16 oz) spaghetti, broken into thirds

Cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.

Spray slow cooker with cooking spray. In slow cooker, mix beef and onion mixture, tomatoes, tomato paste, chili seasoning, broth, vinegar, Worcestershire sauce, cinnamon, allspice, salt and pepper.

Cover; cook on Low heat setting 7 to 9 hours.

About 15 minutes before serving, cook spaghetti as directed on package.

Serve chili over spaghetti; sprinkle with shredded Cheddar cheese.
