Joy In The Journey 12-5-2018

If you have ever had need of Maple Lawn Nursing Home’s  services in your family life, you know how hard working the staff is.  And you know how proud and appreciative we should all be to have this caring and giving place in our very own community.  One of the service groups within this senior care center in Fulda is made up of volunteer ladies from Fulda and the surrounding area. On Monday of this week the Pink Ladies came together to provide a  Christmas salad luncheon to honor the staff.  It is a yearly event that gives the workers of Maple Lawn just a few minutes to sit down, eat, and visit without worrying about their daily duties.

   Maple Lawn provides help with this event in providing the drinks and table service, along with setting up and taking down tables, etc.  One of the repeated  comments heard was how delicious the punch was!  It was so refreshing, and I asked Kay, one of the dietary personnel, if we could share it with you in the column today.  It is a pretty red color and perfect for any Christmas holiday get-together.  Enjoy!

Refreshing Raspberry Punch

2 quarts Cranberry/Raspberry juice

1 liter of ginger ale

1/2 liter of 7-Up

box of Raspberry Sherbet, softened a little

Mix altogether to fill one punch bowl.

Ladies on the committee each bring a salad to serve.  Cindy Ramert brought one with a an interesting title and a delicious flavor, “ Big Mac Salad”.  She said it has everything in it that you find when you order a Big Mac!  Unlike the sandwich of the same name, it is low carb, because it is served without the bun.  Try it out on your family!

Big Mac Salad

1 pound ground beef, browned and drained

1 tsp. sea salt

1/4 tsp. black pepper

8 ounces iceberg lettuce, chopped

1 cup chopped tomatoes

3/4 cup shredded cheddar cheese

1/2 cup dill pickle relish, drained well

Mix all this together with the following dressing:

3/4 cup mayo

3 Tbsp. dill pickle relish

3 tsp. mustard

1 1/2 tsp. vinegar

3/4 tsp. paprika

2 Tbsp. sugar

Chill salad and enjoy.
