Rhubarb Upside-Down Desserts
1/3 cup packed brown sugar
2 tablespoons butter or margarine, melted
2 tablespoons dark or light corn syrup
1/2 teaspoon grated orange peel
1 1/2 cups chopped fresh rhubarb
4 frozen Pillsbury® Grands® Southern style biscuits
1/2 teaspoon granulated sugar
1/8 teaspoon ground cinnamon
1 cup vanilla ice cream
Heat oven to 375º. Spray insides of 4 (6 oz.) custard cups with cooking spray. Place custard cups on cookie sheet with sides.
Mix brown sugar, butter, corn syrup, orange peel and rhubarb; divide evenly among custard cups. Top each with 1 biscuit. In small bowl, mix granulated sugar and cinnamon; sprinkle over biscuits.
Bake 25 to 28 minutes or until deep golden brown; cool 1 minute. Turn upside down onto 4 serving plates; remove custard cups.
Serve warm with ice cream. 4 servings
Strawberry Salad with Almonds
1/2 cup slivered almonds
3 tablespoons sugar
2 cups packed fresh spinach leaves
2 cups packed Boston lettuce
2 cups sliced strawberries
1/2 cup creamy poppy seed dressing
Toss almonds with sugar in nonstick skillet; cook on medium heat until sugar is caramelized, stirring constantly. Spread into single layer on greased baking sheet or wax paper; cool. Break into small pieces. Toss spinach, Boston lettuce and strawberries in large bowl. Drizzle with dressing just before serving. Toss lightly.
Sprinkle with almonds.
Pork Chops with Creamy Lime Salsa
1/2 cup mayonnaise
1 tablespoon lime juice
1/4 cup finely chopped red onion
1 clove garlic, finely chopped
1/4 teaspoon grated lime peel (optional)
1/8 teaspoon black pepper
4 large boneless pork chops, 3/4 inch thick (about 1 pound)
1 tablespoon Jamaican jerk seasoning
1 medium mango, seeded, peeled and cut into 8 slices
Salsa: combine mayonnaise, lime juice, onion, garlic, lime peel and pepper; set aside.
Evenly season chops with jerk seasoning. Grill or broil chops until done. Arrange chops on serving platter, then evenly garnish with mango and salsa. Serve with remaining salsa.
You may substitute boneless, skinless chicken breast halves or halibut steaks for pork chops.
