Onion Zucchini Bread
3 cups all-purpose flour
3/4 cup chopped onion
1/2 cup grated Parmesan cheese divided
5 teaspoons baking powder
l teaspoon salt
1/2 teaspoon baking soda
l cup buttermilk
1/3 cup vegetable oil
2 eggs, lightly beaten
3/4 cup finely shredded zucchini
Combine flour, onion, 6 tablespoons Parmesan cheese, baking powder, salt and baking soda. In another bowl, combine the buttermilk, oil, eggs and zucchini; stir into flour mixture just until blended.
Spoon into a greased 9 inch round baking pan. Sprinkle with remaining Parmesan. Bake at 350º for 40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack 10 minutes before removing from the pan.Yield: 6-8 servings.
Apple Yeast Bread
2 tablespoons butter, melted 3/4 cup warm water
1/2 cup sugar 1/4 cup sugar
l teaspoon ground cinnamon l teaspoon salt
l large tart apple, peeled and 2 1/4 cups all-purpose flour
thinly divided
1/4 cup raisins l egg, lightly beaten
l package active dry yeast 1/4 cup shortening
Pour butter into a 9 inch square baking pan. Mix sugar and cinnamon; sprinkle over butter. Arrange apple slices in pan. Sprinkle with raisins.
In a mixing bowl, combine yeast, water, sugar, salt and l cup flour; beat for 1-2 minutes. Add egg, shortening and remaining flour. Beat for l minute. Drop dough by spoonfuls over apples. Cover and let rise in a warm place until almost doubled, about l hour.
Bake at 350º for 30-35 minutes or until golden brown. Invert pan on a serving platter. Yield: 9 servings.
Pizza Hot Dish
2 cans refrigerated crescent rolls
1 1/2 to 2 pounds hamburger
15 ounce jar spaghetti sauce
8 ounces shredded cheddar cheese
8 ounces shredded mozzarella cheese
Brown hamburger and add spaghetti sauce. Line a 9 x 13 inch pan with l can of crescent rolls. Put hamburger mixture over rolls. Top with cheeses. Cover with other package of crescent rolls. Bake 20 minutes at 350º. |
