Apple and Carrot Casserole

6 large carrots, sliced

4 large apples, peeled, quartered, cored and sliced

5 tablespoons all-purpose flour

l tablespoon packed brown sugar

1/2 teaspoon ground nutmeg

l tablespoon margarine

1/2 cup orange juice

1/2 teaspoon salt (optional)

Preheat oven to 350º. Cook carrots in large saucepan in boiling water 5 minutes; drain. Layer carrots and apples in large casserole. Combine flour, sugar and nutmeg; sprinkle over top. Dot with margarine; pour orange juice over flour mixture. Bake 30 minutes or until carrots are tender. 6 servings.

Onion Cheese Bread

1/2 cup chopped onion

l tablespoon butter or margarine

l egg

1/2 cups milk

1 1/2 cups Bisquick®

l cup grated cheddar cheese, divided

l tablespoon poppy seed

2 tablespoons melted butter or margarine

Cook onion in l tablespoon butter until tender and light brown. Combine egg and milk. Add to Bisquick. Stir until dry ingredients are moistened. Add onion and half the cheese. Spread in a greased 8 inch round pan. Sprinkle with remaining l cup cheese and the poppy seed. Drizzle with butter. Bake at 400º for 20-25 minutes. Serve warm.

Chinese Pork & Vegetable Stir-Fry

2 tablespoons vegetable oil, divided

l pound pork tenderloin or boneless beef sirloin, cut into 1/4 inch slices

6 cups assorted fresh vegetables ( broccoli, red or green bell pep- pers, snow peas, and/or thinly sliced carrots)

l envelope onion soup mix

l can (8 ounces) sliced water chestnuts, drained

3/4 cup water

1/2 cup orange juice

l tablespoon soy sauce

1/4 teaspoon garlic powder

Heat l tablespoon oil in 12 inch skillet over medium-high heat; brown meat. Remove and set aside.

Heat remaining l tablespoon oil in same skillet and cook assorted fresh vegetables, stirring occasionally, 5 minutes. Stir in water chestnuts, onion soup mix blended with water, orange juice, soy sauce and garlic powder. Bring to a boil over high heat. Reduce heat to low and simmer uncovered 3 minutes. Return meat to skillet and cook l minute or until heated through.
