Last Friday was “Pie Day” at Maple Lawn Senior Care sponsored by the Pink Ladies. It is held twice a year in May and September, on the last Friday of those months. The residents seem to enjoy the special treat of pie, and the members of Pink Ladies are more than happy to oblige to keep this event happening. The pie is served at the regular coffee time that is held each afternoon at the local nursing home.
If you are a person with a caring spirit, compassion for those who live at Maple Lawn, and like to give of your time to brighten another’s day, then maybe you would consider joining the Pink Ladies group in Fulda. They meet the first Tuesday of each month, except for July and August, for a short business meeting and planning. During every month of the year, these volunteers take turns showing up at Maple Lawn Senior Care to play Bingo, host a monthly Birthday Party during coffee time, and also taking time for visiting each resident on Visitation Days. Even if you are a Snowbird, and leave Minnesota for a few months of the year, you are welcome and encouraged to come and be part of this group.
This group of ladies are flexible and willing to “trade times” with those who can’t make their assigned times of service. It takes a number of women to make these times of caring and serving at the nursing home happen regularly. If you have any interest in finding out what the Pink Ladies organization is about, please come and visit one of the meetings. You would be most welcome!
The residents have certain kinds of pies that they seem to ask for every time Pie Day is held. The last few times we have been asked to provide one or two sugar free pies for those who need to keep that in their diet. My sister, Julie, shared the following recipe with me a few years ago, so I made it for Pie Day last week. Since this is apple season, I thought you might like a recipe with a little less calories and no sugar added. Enjoy! Sugar Free Apple Pie
1 1/2 Tblsp. cornstarch
1 tsp. cinnamon
One 6 oz. can frozen apple juice
6 cups sliced apples
1 Tlbs. butter
Preheat oven to 425 degrees. Prepare pastry. Combine cornstarch and cinnamon in a small saucepan.
Stir in the undiluted apple juice. Heat until thickened, stirring constantly.
Pour the mixture over the apples and stir until coated. Put apples into pastry lined pan.
Dot with butter. Top with pastry. Bake 10 minutes at 425. Lower oven temp. to 375 degrees and finish baking 35-40 minutes.
