Joy in the Journey 2-13-2019

It is just about here.  That time of year we remember those we love with some kind of valentine remembrance.  Have you ever heard of the 3-2-1 Cake?  I received this through the email from my friend Carol who lives in Colorado.  She, like me, is a grandma, and her grandkids and great grandkids especially enjoy this treat.  She lives in a beautiful housing area for seniors, and they are the recipients of this sweet gift  from her also.

   Maybe you have someone in your life who would enjoy a quick and simple treat from you this Valentine’s Day.  I am going to try this the next time little Selah, our two year old granddaughter, comes to stay with us for the day.  Usually one of the first words she says to me when she arrives is “eat” or “cookie”!  I think she would enjoy this microwave snack after her nap or helping pick up all the toys.  Maybe with whipped cream or ice cream, or the little chunks of pineapple she loves!  She will get a kick out of helping mix it up and watching while it bakes.  Most of all she will delight in devouring it.   I can’t wait to see her big smile!

3-2-1 Cake

Mix a box of Angel Food cake mix AND a box of any regular cake mix together.

Put the dry ingredients into a Ziplock bag or covered container.

To make one cake serving:

Measure 3 Tbsp. of mix into a cup with 2 Tbsp. of water.

Bake One Minute in the microwave.  INSTANT CAKE!!

This is delicious topped with fruit or whipped cream.

   One idea that Carol shared:  She put three Tbsp. of the mixture into a small baggie with baking directions and sent it to grandkids in college.  Carol did the same and delivered it to some elderly folks in her nearby apartments.  Do you have a neighbor or a friend that would enjoy a visit AND a treat at the same time?  Share some time and love!

Valentines Day is all about love.  We know there are many kinds of love, but there seems to be no better advice for love than the original from I Corinthians, chapter 13: 1-7.

   “If I speak in the tongues of men and angels, but have not love, I am only a resounding gong or a clanging cymbal.

   If I have the gift of prophecy and can fathom all mysteries and all knowledge, and I have a faith that can move mountains, but have not love, I am nothing.

   If I give all I possess to the poor and surrender my body to the flames, but have not love, I gain nothing.

   Love is patient, love is kind. It does not envy, it does not boast, it is not proud.

   It is not rude, it is not self-seeking, it is not easily angered, it keeps no record of wrongs.

   Love does not delight in evil, but rejoices with the truth.

   It always protects, always trusts, always hopes, always perseveres.”

        (A friend once told me to put my name in place love…it was a good wake up call for me!)

    This chapter ends with verse thirteen which says, “ And now these three remain: faith, hope and love.  But the greatest of these is love.”
