Joy in the Journey 4-15-2020

I’m trying to be thankful for the quiet days.  I am trying to find joy and thanksgiving in each day, and I have to say that friends and relatives who send humor my way are helping a whole lot to make that happen!  I’ve always been a believer that a good, hearty laugh is such good medicine for whatever ails you!  It has been fun to open e-mails with short quotes or cartoons that just make me giggle out loud.  What awesome therapy for thoughts that may have been headed toward worry or anxious feelings. Some have even brought tears to my eyes, in a good therapeutic way!

   I am “on” Facebook, but mostly as a stalker!  I love to see others’ posts, and certainly enjoy the family pictures, but I have rarely shared much myself.  In these times of staying mostly at home, I have found several videos and crazy posts that have helped to brighten my days.

   Maybe this new kind of social distancing report will help to lighten your mood…..

   **  I don’t think that anyone thought that when we changed the clocks we’d go from Standard Time to the Twilight Zone.

   **  The world has turned upside down.  Old folks are sneaking out of the house, and their kids are yelling at them to stay indoors!

   **  Do not call the police on suspicious people in your neighborhood!  Those are your neighbors without makeup and hair extensions!

   **  Day 15 at home and the dog is looking at me like, “ See?  This is why I chew the furniture!”

   **  I need to practice social distancing from the fridge!  Alert: Every few days try your jeans on to make sure they fit.  Pajamas will have you believe all is well in the kingdom.

   **  Homeschooling is not going well:  Two students are suspended for fighting and one teacher was fired for drinking on the job.

   **  Classified Ad:  Single man with toilet paper seeks woman with hand sanitizer for good clean fun!

   **  I’m so excited.  It’s time to take out the garbage.  What should I wear?

   **  Sheltering in Place has turned us into dogs.  We roam the house all day looking for food.  We are told “no” if we get too close to strangers.  And we get really excited about car rides.

  **   Does anyone know if we can take showers?  Or should we just keep washing our hands?

  **  Quarantine day 21: Went to this restaurant called THE KITCHEN.  You have to gather all the ingredients and make your own meal.  I have no clue how this place stays in business.

   I think I might have mentioned in the last couple weeks that I have been enjoying trying new recipes.  These pancakes are really tasty, and the combination of chocolate chips and pumpkin put them over the top!  Laughter AND chocolate together…now that IS a good day!

Pumpkin-Chocolate Chip Pancakes

2 1/3 cups pancake mix

1/2 tsp. cinnamon

1/4 tsp. nutmeg

1/4 tsp. cloves

2 large eggs

1 1/4 cups buttermilk

1/3 cup canned pumpkin

1/4 cup butter, melted

1 Tlbs. honey

1/2 cup miniature (or regular sized) choc. chips

In a large bowl combine the first four ingredients.  In a small bowl, whisk together the rest EXCEPT the chocolate chips.  Add the dry and wet mixtures together until well moistened.  Stir in the chocolate chips.  Pour batter by 1/4 cupfulls onto a hot, greased griddle.  Cook until golden brown on both sides.  Serve with drizzled honey on top.  Makes about 15 pancakes.
